Ingredients:
2 cups cooked jasmin rice
1 Chicken Breast
1/2 Tablespoon Olive Oil
1/2 Large Carrot
1-2 Spring Onion
1 1/3 Cup Grated Cheese
1-3 eggs
Method:
- Precook your rice
- Preheat oven to 200 Celsius.
- Slice Chicken breast in half widthways, so it will cook quicker.
- Heat the oil in the pan and start to cook the chicken breast until it begins to be brown.
- Shred chicken with a fork.
- Grate the carrot until it fills up halfway.
- Slice the spring onions.
- Lightly beat the eggs.
- In a large bowl add your cooked rice, Chicken, Spring onions, eggs and 3/4 of the cheese and mix it well.
- Spray the muffin tin with cooking spray and distribute it evenly into the muffin tin.
- Pop your tray in the oven and leave it for 10-15 mins ( maybe less) ( but if your cooking it in a pan just cook it for 5-7 mins on each side)
