Chicken and Rice Patties

Ingredients:
2 cups cooked jasmin rice
1 Chicken Breast
1/2 Tablespoon Olive Oil
1/2 Large Carrot
1-2 Spring Onion
1 1/3 Cup Grated Cheese
1-3 eggs

Method:

  1. Precook your rice
  2. Preheat oven to 200 Celsius.
  3. Slice Chicken breast in half widthways, so it will cook quicker.
  4. Heat the oil in the pan and start to cook the chicken breast until it begins to be brown.
  5. Shred chicken with a fork.
  6. Grate the carrot until it fills up halfway.
  7. Slice the spring onions.
  8. Lightly beat the eggs.
  9. In a large bowl add your cooked rice, Chicken, Spring onions, eggs and 3/4 of the cheese and mix it well.
  10. Spray the muffin tin with cooking spray and distribute it evenly into the muffin tin.
  11. Pop your tray in the oven and leave it for 10-15 mins ( maybe less) ( but if your cooking it in a pan just cook it for 5-7 mins on each side)
